Ready for a fresh, raw and vibrant salad for your next picnic or dinner party? Bring on the Citrus Asian Slaw! It’s great salad for any barbecue or gathering, no mayo to worry about either.

FRESH INGREDIENTS

Made with crunchy cabbage, daikon radish, parsley, green onion and sesame seeds to start. Topped with a quick dressing of fresh orange and lemon juice, coconut aminos, avocado oil and one little date for some sweet.

WHY DAIKON RADISH

Daikon has a really mild flavor and tons of crunch. When you’re out for sushi you’ll find it at the base of your sashimi or on the side as décor. Next time dip it in some sauce and give it a try if you haven’t yet!

The roots are long and PERFECT for a veggie noodle. I used a julienne tool to get all of it sliced up in minutes.

Daikon has many health benefits, enzyems to aid in digestion and detoxification as well as boosting immunity with it’s anti fungal properties.

GET CREATIVE

Citrus Asian Slaw would be great with purple cabbage for some extra color, carrot or red onion. Try cucumber or bean spouts if you have them in the fridge instead. Herbs like cilantro or basil, the possibilities are endless!

TIPS

When using a mandolin BE CAREFUL! Keep your fingers out of the way of the blade. Some have a tool you can use and others don’t to secure your fingertips. I keep may palm flat and keep an eye out if I get too far down on the veggie. This is the newer version of what I use in the video;

Begin with a half a head of cabbage, the daikon may vary in size. Try and keep it even amounts of both. Add more cabbage if needed to even the ratio out.

Get yourself a fancy julienne grater if you can for the radish, if not you can cut into thin matchstick style pieces with a sharp knife.

I use Redmond Real salt, a little goes a long way with this beautiful wonder. Salt to taste 😉

Citrus Asian Slaw

Ingredients

  • 1/2 Head Green Cabbage
  • 1 Lg Daikon Radish
  • 2 B Italian Parsley
  • 1 B Green Onion
  • 2 T White Sesame Seeds

Dressing

  • 1 Med Orange
  • 1 Med Lemon
  • 2 T Coconut Aminos
  • ⅓ C Avocado Oil
  • 1 Lg Pitted Date
  • ½ t Redmond Real Salt

Instructions

  1. Use a mandolin or thin shred setting on food processor to grate the cabbage. Julienne the daikon, chop parsley and cut the green onion on the bias. Set a small bit of green onion on the side for garnish, then add all items to a large mixing bowl.

  2. Get a tall jar for the dressing. Juice the orange and lemon together, use a 1/3 of a cup of the juice. Make a cocktail with the rest! Add the aminos, salt, oil and date all together and pulse with an immersion blender until smooth.

  3. Pour the dressing over the salad mixture add 1 T sesame seeds and mix all together with two spoons. Sprinkle the remaining seeds and green onion on top and serve.
