Whole30 Stuffed Meatballs with Spicy Bloody Mary Sauce

Meet the party meatball that dreams are made of. Whole30 meatballs stuffed with olives, dipped in zingy Tabasco Bloody Mary dipping sauce. Here's a new hearty low carb appetizer that will WOW all your guests!

Ingredients

  • 1 lb grass fed 85/15 ground beef
  • 1/2 c almond flour
  • 1 egg
  • 1/2 t fine pink salt
  • 2 t dried onion
  • 2 t ground black pepper
  • 1 t celery seed
  • 1 t Tabasco sauce
  • 1 5.75 oz jar small Spanish olives
  • 1 T ghee
  • 1 1/2 c Bloody Mary Marinara Sauce (recipe linked!)

Instructions

  1. Heat oven to 350f. In a large mixing bowl combine the beef, almond flour, egg, all the spices and Tabasco sauce. Mix with your hands until it's all a big ball of meat, nothing left in the bottom of the bowl! About 1-2 minutes of kneading together.

  2. Line a 2 Qt (8in x11in) baking dish with ghee and grab a tablespoon to measure the meatballs. Drain the olives and put them in a small bowl. Have the meat, olives and the tray ready for assembly.

  3. Take a heaping tablespoon of meat and pat into the palm of your hands, think the size of a mini slider. Then, add one olive in the middle and close your hand, pinch the meaty sides around the olive to completely wrap it inside, roll it around in your hands to form a little gorgeous meatball.

  4. Repeat the process and assemble the meatballs in a 5 across and 7 down fashion in the baking dish, they touch each other; it's a snug meatball party! Bake for 30 minutes. Serve with toothpicks and the Bloody Mary Sauce on the side to dip. Best served hot/warm but they can sit out at the party or be reheated for a late night second round :)

Recipe Notes

Serving option - You can use an entire batch of the Bloody Mary marinara sauce (3 cups) and combine the sauce and meatballs into a slow cooker to keep warm at your party, options!
