Preheat oven to 375f Prep the veggies and toppings; Halve the cherry tomatoes, use a mandolin or sharp knife to cut thin slices of zucchini, onion and yellow pepper. Try and get as evenly sliced as possible.
Halve the olives, dice the pepperoncini and parsley, chiffonade the basil into ribbons, quarter the artichoke hearts.
Ready to assemble! The largest sheet pan that will fit in your oven line it with parchment paper. Start with the avo oil - drizzle it all over the paper. Try and evenly distribute everyone and start first with the zucchini, go to every corner of the pan. They don't have to be perfectly layered.
Tear the spinach up to small pieces, break up the sausage into small bites, add the tomato, onion and yellow pepper next. Season, then add the olive, pepperoncini and artichoke hearts.
Bake on center rack for 20 minutes- make sure your sausage is thoroughly cooked.
Whole30'ers- Look for a sausage that is simple, I've found them with only pork and salt. Use compliant olives, pepperoncini and artichoke hearts.
