Buffalo Chicken Salad

Chicken and carrots, diced celery, riced cauliflower, green onion and a firecracker mayo sauce with smoky paprika and hot sauce, it's all Whole30 compliant!

Ingredients

  • 1 c shredded chicken
  • 1/2 c diced celery
  • 1/2 c shredded carrot
  • 1/2 c cauliflower rice
  • 1/4 c diced green onion

buffalo sauce

  • 1/3 c Whole30 compliant mayo
  • 1/2 squeezed lemon
  • 1 t smoked parika
  • 1/2 t Tobasco or Frank's Ret Hot Suace

Instructions

  1. In a medium bowl combine the top ingredients together. You can mix them up ahead of time a little to make it more evenly distributed

  2. In a small dish combine he sauce ingredients together, watch the lemon seeds

  3. When mixed pour over the veggies and combine until the sauce is covering every single bite!
