Whole30 Italian Kale Sauté made with sausage, onion, pepperoni, olives, pepperoncini, artichoke hearts and kale. It's a hearty delicious 30 minute meal!
In a large saute pan brown the sausage and onions in avocado oil on medium heat. 5-7 min
While cooking, chop up pepperoni, olives, pepperoncini and artichoke hearts. Add to the pan cook and stir occasionally another 5-7 minutes
While cooking, massage the kale in a bit of oil and salt for a minute or two. The oil will cover the leaves and the texture will become more broken down. Top the dish with the kale, cover with a lid and let set on med-low for 7-10 minutes until the kale is wilted down a bit yet still vibrant green
Stir completely, serve in bowls. Top with a touch more avocado oil some red pepper flakes and salty Parmesan if your in your food freedom :)
